Ingredients for Pumpkin & Apple Muffins:
- 2 apples
- 310 g of flour (2 1/2 cups)
- 400 g of sugar (2 cups)
- 2 eggs
- 120 ml of neutral oil (1/2 cup)
- 245 g of pumpkin puree (1 cup) (which you can buy here or make yourself)
- 1 teaspoon of baking soda
- 1 tablespoon of pumpkin spice mix
- 1/2 teaspoon of salt
For topping:
- 50 g of white sugar (1/4 cup)
- 1 teaspoon of cinnamon powder
- 15 g of flour (2 tablespoons)
- 20 g of butter (4 teaspoons)

Since we’re two weeks away from Halloween and it’s pumpkin season, today I’m presenting you with a muffin recipe with the taste of pumpkin spice.
This spice blend, which is used at Starbucks, has become so ubiquitous that its use in any beverage or dish evokes autumn.
By adding apples, another seasonal product, we’re also being more environmentally friendly.
This muffin is rich in spices; you can even use a larger dose if you like the taste of pumpkin spice. If you’re not a big fan of cinnamon, you can use another similar spice, or only use pumpkin spice.
The pumpkin puree will give the cakes an orange color, making them perfect sweet treats for an October 31st evening.

Recipe for Pumpkin & Apple Muffins:
- Preheat the oven to 175°C (350°F).
- Line the muffin tins with paper liners.
- Take a large bowl.
- Add the flour, sugar, pumpkin spice mix, salt, and baking soda.
- Take another bowl.
- Add the eggs, pumpkin puree, and oil.
- Beat the mixture.
- Pour it into the large bowl.
- Mix just enough for everything to combine.
- Cut the apple into small cubes.
- Add it to the mixture and gently fold in the apples.
- Pour the batter into the muffin tins using a spoon.
- Mix the remaining flour, sugar, cinnamon, and incorporate the butter in small pieces.
- Work the mixture with your fingers to make a kind of crumble.
- Sprinkle it over the muffin tins.
- Bake for 35 to 40 minutes.
