Today, I’m presenting you with the recipe for churros! These long, star-shaped pastries originated in Spain, specifically in Madrid. These fried and sweet delights have crossed borders and are now known worldwide.
There are many recipes for making these pastries. Today, we’ll focus on the one found at the most famous American carnivals. Want to know more? Follow all the steps.
Origin of American Carnivals:
The United States is a big fan of carnivals, it’s even ingrained in their culture! Indeed, every year, an annual event is organized, called the “State Fairs”. A mix between an expo and a carnival, each state has its own event.
However, carnivals in the United States weren’t what we know today. It was around the 19th century that many farmers exhibited their livestock and products to the public. Many farmers wanted to compare their cows with those of other farmers in their state. Over time, these fairs evolved.
Nowadays, you can find many artists and artisans, as well as concerts, games, or even rides. As for food, it’s a paradise of frying! Fried pickles, fried lasagna, fried chocolate bars, and of course, churros, each state has its specialty.
Today, these fairs in the United States attract over 100,000 visitors per day. Some even attract up to 2 million people each year.
American-style Churros Recipe:
Want to make these long pastries found at most American carnivals? Then follow the recipe.
Ingredients:
- For 4 people
- Preparation Time: 15 minutes – Cooking Time: 10 minutes
- 120 grams of butter
- 450 grams of flour
- 4 pinches of sugar
- 2 sachets of vanilla sugar
- 2 pinches of salt
- 50 cl of water
- 4 eggs
- Frying oil
- Sugar for dusting
Preparation:
- Start by boiling 50cl of water in a small saucepan with 120 grams of butter cut into small pieces. Add salt and sugar.
- Once the mixture has melted well, add the flour all at once.
- Mix the preparation well and remove it from the heat. Then pour it into a container.
- Add the first egg. Mix so that the egg can be well incorporated.
- Add the second egg, then mix, and so on. The dough should be sticky. If not, feel free to add a little water.
- Once all the eggs are incorporated, let the dough rest for 1 hour.
- Meanwhile, preheat your deep fryer to 180°C. You can also cook your homemade churros in a large pot of frying oil.
- Pour the dough into the pastry bag with a star-shaped tip. Shape the churros into long strips of about 10 to 15cm and let them fall directly into the hot oil.
- Fry them for 3 minutes, until they are golden brown.
- Then remove them with a slotted spoon and drain the churros on paper towels to remove excess oil.
- Finally, sprinkle with sugar and serve warm. You can also dip them in caramel or chocolate sauce for extra indulgence (I recommend hot fudge).
How to Make Churros with a Machine?
Want to quickly make a large quantity of churros? It’s entirely possible with a professional churros machine! This device can be either manual or electric. It will easily shape the churros to the ideal length before being plunged into the oil bath.
If it’s a manual churros machine, here are the steps to follow to succeed:
- Start by preparing the dough with the recipe mentioned above.
- Then pour the donut batter into the container of your machine.
- Then turn the handle of your device. This maneuver will press the dough to expel it in the chosen shape (often in star shape). So much simpler than with a pastry bag!
- Cut your churros to the desired length as the dough comes out of the doser.
- Dip them in the oil bath of your professional fryer.
With a manual churros machine, you will produce up to 90 churros per hour!
With an electric churros machine, you don’t have to do anything, just watch your churros form! With this device, you can achieve high output, up to 150 churros per hour.
Finally, to successfully cook your delicious churros, fry them in a donut fryer specially designed for this purpose. This powerful appliance will have a much higher output than a traditional fryer. On some models, you can fry up to 2kg of churros per hour with a power of 5kW.
